What a tasty day I had for Meatless Monday!
Breakfast: Mango Chobani Greek yogurt shake.
In a blender, put in yogurt along with skim milk and ice, and blend to your preferred consistency.
Lunch: Roasted Buffalo cauliflower salad.
Wash and cut cauliflower and then toss it lightly in olive oil before baking it on high heat for half an hour. Place in a bowl and put in a pat of butter, salt, pepper, and buffalo sauce, on the steaming cauliflower and toss until coated well. Eat with veggies (I had a simple salad of lettuce and tomato but the usual carrot sticks and celery would be great too) along with low fat blue cheese or light ranch dressing on the side!
Snack: Classic combo of natural peanut butter and an apple.
Dinner: Newman’s Own Fire Roasted Tomato and Garlic Pasta Sauce with sautéed garlic and eggplant over Barilla Plus Farfalle bowtie pasta.
Rinse eggplant, cut off ends, and in a heated skillet, with oil and minced garlic, cook eggplant slices through on stovetop. Once the slices soften, add in tomato sauce and cover until heated. Enjoy the sauce and eggplant with the pasta with a dash of parmesan cheese!
Dessert: Not really hungry at all. But I might take a snack out of this bad boy…Details on this Love With Food box coming soon!
